More grain, more gain – Power bars for KIDS

If your child's days (and yours!) are full of non-stop activities from morn to evening, he or she will need substantial meals and energy-rich snacks to keep going. This homemade muesli bar recipe is yummy, high in fibre and low in fat (if you
go easy on the nuts and topping). Best of all, you can customise the flavour to suit your child's taste and pack them in a cute container or resealable bags for a quick and healthy snack anytime.


(Note: If your child is allergic to nuts and nut-related products, skip the nuts and add more dried fruit and perhaps some rice puffs for texture.)
You will need:
1 cup oats
half a cup mixed and dried fruit (cranberry, apple bluberry etc.)
half a cup of raisins/nuts (can mix too)
1 cup of apple juice or any fruit juice (unsweetened)
a few tablespoons of honey or a lil more
a pinch of cinnamon
Hint – if you really want to save time, just buy a box of mixed fruit muesli to start with Smile

Instructions:
1. Heat your oven to 170C.
2. Boil the apple juice on low heat until the liquid is reduce by half (should be a bit like syrup). Turn off the heat.
3. Add the rest of the ingredients into the pot and stir it all up. Add the honey bit by bit until the mixture is no longer crumbly but sticks together as a mass.
4. Transfer the muesli mixture into a greased or non-stick shallow rectangular tray and press down to make a compact shape about 1.5 cm thickness.
5. Bake for about 15 min or until you see the surface becoming a little dry and crispy, but the contents are still moist.
Remove from oven and with a knife, cut lines in the baked muesli based on the size of the bars you want.
When muesli is cool, tip it out and snap the pieces of muesli.
You can customise the bars by piping some topping such as yoghurt cream (see recipe below), melted chocolate etc.
You can also press some chocolate chips into the muesli when it is fresh from the oven for a chocolatey treat.
To make yoghurt cream, mix ha
lf a cup of reduced-fat cream cheese,
2 generous tablespoons of plain yoghurt and
half a cup of icing sugar or sugar powder.
Mix this all together until you get a consistency like peanut butter. If it is too wet, add more sugar or if too dry, add more cream cheese.
